Roast vegetables to your taste using a high quality oil (olive, coconut, avocado, macadamia, or butter) and select seasonings. You may add almost any type of vegetable to your roasts with the exception of tubers. Zucchini, summer squash, onion, garlic, and bell peppers make for a great base.

Instructions
  1. Preheat oven to 375°F and coat an oven safe dish with olive oil.
  2. Wash your raw vegetables whole before cutting them into bite size pieces. Spread them evenly across the roasting dish.
  3. Coat with organic olive or coconut oil and preferred seasonings.
  4. Bake for 30-45 minutes or until vegetables are tender but not charred, stirring occasionally to ensure even cooking.
  5. Remove & serve or refrigerate.
